Resumen : | Se determinó el efecto de la sustitución de la harina de trigo (5, 10 y 15%)
por harina de maca (Lepidium peruvianum) sobre el contenido de proteínas
y aceptabilidad general del pan integral. Las variables fueron evaluadas 24
h después de la elaboración del producto. Se realizaron pruebas
estadísticas a un nivel de confianza del 95%. La prueba de Levene
modificada demostró la homogeneidad de las varianzas. El análisis de
varianza indicó un efecto significativo (p < 0,05) de la sustitución de la harina
de maca en el contenido de proteína del pan integral. La prueba de
comparación múltiple de Tukey determinó que el mejor tratamiento fue la
sustitución de la harina de trigo por 15% de harina de maca, ya que
proporcionó el mayor contenido (22,60%). Para aceptabilidad general se
realizó la prueba de Friedman mediante la cual se determinó diferencia
significativa (p < 0,05) entre las muestras evaluadas, además, el tratamiento
con harina de trigo al 10% presentó mayor rango promedio de 3.43 con
moda de 6, correspondiente a la percepción de “Me gusta muchísimo”,
posteriormente se comparó este tratamiento contra los demás mediante la
prueba de Wilcoxon donde fue estadísticamente diferente (p < 0.05). The effect of substitution of wheat flour (5, 10 and 15%) by maca flour (Lepidium peruvianum) on protein content and overall acceptability of whole wheat bread was determined. The variables were evaluated 24 hours after the elaboration of the product. Statistical tests were performed at a confidence level of 95%. The modified Levene test demonstrated the homogeneity of the variances. The analysis of variance indicated a significant effect (p < 0.05) of the substitution of maca flour on the protein content of whole wheat bread. Tukey's multiple comparison test determined that the best treatment was the substitution of wheat flour for 15% of maca flour, as it provided the highest protein value (22.60%). The Friedman test did not determine any effect or significant differences in all treatments (p < 0.05), so the Wilcoxon test was performed, in which it was determined that the substitution of HT by 10% HM, which reached the highest rank (3.43) of the other treatments, thus being the best in terms of general acceptability. |
